Ingredients (one per line):
5 lbs snails 6 stalks lemongrass, smashed and cut into halves (about 5 inches long) 6 cloves garlic, diced 1 medium shallot, diced Salt 5 lime leaves 2 cups coconut water 2 chili peppers, chopped
Instructions:
In a large pot of boiling water, add salt and stir well. Add the snails and boil for 20 minutes. Once cooked, rinse the snails thoroughly with cold water and set aside. In a separate pot, combine the snails, coconut water, lime leaves, 1 tsp of the diced shallot, and the smashed lemongrass. Bring to a boil over medium heat. Once boiling, cover the pot with a lid and cook for an additional 4 minutes. Serve the snails hot, garnished with chopped chili peppers for added heat.
