Ingredients (one per line):
1 lb shrimp (cleaned, deveined, with shell on) 1/2 cup ketchup 1 large onion, sliced 1 cup carrots, sliced 1 cup sweet peppers, cut into chunks 1 piquillo pepper or bell pepper, or any sweeter red pepper, chopped 1 hot pepper, chopped 3 cloves garlic, grated 1 tsp ginger, grated 1 tsp sesame oil 2 tbsp avocado oil 1 tbsp oyster sauce 1 tsp Chinese Seasoning 1/2 tsp cayenne pepper 1/2 tsp soy sauce salt to taste 1/4 cup water (approx.) 1/2 tsp cornstarch mixed with 1 tbsp water Chopped chives, for garnish Sliced pimentos, for garnish
Instructions:
Season the shrimp with cayenne pepper and Chinese seasoning. Set aside. In a pan or wok, heat avocado oil over medium heat. Sauté the hot pepper, garlic, ginger, and piquillo pepper or bell pepper, or any sweeter red pepper until fragrant. Add the carrots, sweet peppers, and onion. Stir-fry for 1-2 minutes. Stir in the ketchup, sesame oil, oyster sauce, soy sauce and water. Cover and let simmer for about 2 minutes. Add the seasoned shrimp, cover, and cook for 2-3 minutes on medium heat until the shrimp are cooked through. Adjust seasoning with more Chinese seasoning if needed. Stir in the cornstarch mixture to thicken the sauce. Garnish with chopped chives before serving.
